Tortiglioni are one of the many variants of Macaroni, one of the oldest formats born in Naples.
Their name naturally refers to the format and derives from the vulgar Latin tortillare which literally means winding in a spiral with a characteristic drawing worked on the turn.
It is a particularly versatile format and at the same time original, which traditionally prefers the full -bodied condiments.
